Mom's Original Kale & Linguica Soup

Mom's Portuguese Kale Soup
 
1/2 - Tbs. crushed red pepper flakes
2 -    Tbs. butter
Approx 2 - tsp salt (to taste)
1-2 - cans of kidney beans & the juice
1-1/2 - Lbs. Portuguese linguica sausage or chourico
         (chopped 1/4 long inch round sections)
1 -    Medium size onion chopped
2 -    Bunches of fresh kale, chopped (or 4 boxes of
         Frozen chopped kale)
6 -    Medium potatoes peeled and diced
1 -    Large head of cabbage, chopped
        Instead of Linguica you may use
shank beef or chuck roast.
 
In an 8 quart pot, add butter, crushed red pepper and chopped onions. Using medium heat sauté' until the onions are translucent. Add chopped linguica or chourico (or meat if used) sprinkle with a little salt. Sauté ingredients and stir for  a few minutes, if using beef, sauté until beef is partly cooked on the outside. Pour and cover ingredients with water.  Bring water to boil and simmer (20-30) minutes until meat is almost done, add salt to taste. Add chopped kale, cabbage. Add kidney beans & juice. When these ingredients are about half cooked (30 min), add potatoes and simmer an additional 30 minutes or until potatoes can be pierced with a fork.
 
Serves 8 or more. Serve with any hard crust bread
